Paprika and Rosemary Roasted Chicken with Potatoes

Hello, everyone!  Happy Thursday!  Clearly, I love chicken, and I love potatoes, so when I can combine them into one easy dish, I'm a happy girl. So much of this easy supper can be prepped ahead of time, leaving only a 30 minute cook time!  I love quick, easy weeknight meals!

Seasoned Potato Wedges

Hello, everyone!  Good morning!  I figured with college football season upon us, I'd do another post on a good tailgating food.
Potato wedges!  I love potatoes, in almost any form I can get them in (for some reason, I don't like mashed potatoes.  I wish I did, they're everywhere.), and this is one of my favorites!  These are fluffy on the inside while being crispy on the outside, it is perfection in potato form!

Waffle Iron Hashbrowns

Good morning!  Today's post is going to be more on a technique than an actual recipe, so it will be short and sweet!  Back at the end of the year last year, I posted about making crispy hashbrowns, and while those are lovely, easy and simple, these are nearly foolproof.
I say nearly, because fools are always inventing ways to make something that seems foolproof not work.  But I honestly can't see how someone could mess this up.

Crispy Home Fries

Hello, everyone!  Happy Tuesday, I hope your week has started off well!  Growing up, my supper plate always had a veggie, a protein, and a starch.  I have carried this tradition over into my adulthood, but sometimes I get tired of the usual starches, so I turn to potatoes.
I kind of consider potatoes to be the chicken of the starch world.  You can do almost anything to them, and they're always delicious.
That being said, a soggy home fry just makes me sad.   There is a trick to getting crispy home fries that aren't burnt.  Curious as to what it is?  Let's get started to find out!

Chicken Florentine Gnocchi

Hello, everyone!  Today, I have a really simple treat for you.  Simple, yet tasty (I seem to say that a lot...what can I say, I like foods that are easy to prepare, yet can be dressed up for entertaining!); it is somewhat involved, time-wise, but very, very easy to make parts ahead of time.
I made this in two separate...sections, if you will.  I started off making the gnocchi, popped them in the freezer, then, at supper time, threw the rest of this together.  Each section took about 30 minutes, so even if you wanted to make it all at once, you're looking at an hour, tops.  That's not so bad, is it?

Guinness Beef Stew

Hello, everyone!  It looks like we're in the countdown to St.Patrick's day, and the internet being filled with green foods and beer.  There's nothing wrong with that, but I wanted to do something slightly more authentic.  This beef stew is really lovely, with the soft potatoes, tender meat and the slightly biter flavor of the Guinness, it is in pretty steady rotation in our house!

Crispy hashbrowns

With all of the celebrating that is going to be going on tomorrow night, I figured we might need a hangover helper (I'm not going to claim that this is a cure!) for the morning after.  Hashbrowns are very easy to make, have a really nice crunch, and are simply perfect with a hot cup of coffee, a fried egg, and lots of ketchup.

Sweet Potato Casserole....ice cream

One of my favorite dishes for Thanksgiving is sweet potato casserole, however my husband doesn't care for it.  For years, I made it anyway, just to eat a serving or two for myself, then it would get lost in the fridge and I'd end up throwing out the rest a week or so later.  This went on for years.  Years!!  Then I started thinking, "How can I still have my sweet potato casserole, that will keep for awhile without going bad?"  I thought that maybe I could freeze some, and thaw it out....and the more I thought about freezing it, I thought, "Hey!  I could just turn it into an ice cream!!  Yes!  A sweet potato ice cream, with layers of toasted marshmallow ice cream!  Oh!  Even better, I'll make up some candied pecans, swirl them into the sweet potato ice cream!"
I'm not going to lie, I was really on to something with that thought..

Sinful Potato Gratin

Happy Thursday, everyone!  I don't know if you're aware or not, but the Holidays are coming.  Fast.  I don't know about you, but I am a huge planner.  The second I get an idea, I grab a pen and paper and start planning everything, down the the last detail.  You don't even want to know the amount of lists, and thoughts, and ideas I had while I was thinking of starting this blog!  My goodness!  It's funny, though, you would think that as much as I love to plan, that my house would be uber organized.  Nothing could be further from the truth, but I digress.

Fancy potatoes

Welcome back everyone!  On my last post, I showed how to make an amazing Ribeye steak, and for me, when I eat a steak, I want a potato to go with it!  I love potatoes.  There are a million different ways to cook a potato (okay...maybe not a million, but it has to be close!), but I was a little tired of home fries, and baked potatoes.  So, I figured I would shake things up a little bit!

Patriotic Potato Salad

There are very few things that say "4th of July" more than potato salad.  To me, anyway, and I love themed foods, so if I'm going to make potato salad (my version of it, anyway), I'm going to make it as patriotic as possible!  I don't like mayonnaise, so I went for years not eating potato salad, which made me sad, because I love almost all variations of potatoes!  About eight years ago, I heard about doing potato salad a different way, with a vinaigrette base, in place of a mayonnaise base, which makes this perfect for all of those 4th of July BBQ's, and picnics!
