Hello, everyone! It's Thursday again, and with the weekend looming, I thought I would give us a healthy supper for today's post! I do love salmon, so when I saw this beautiful piece of fish on the cedar plank, on sale, I knew I had to scoop it up!

Pan seared catfish
Good morning, everyone! Happy Tuesday! Today is my husband's birthday, so I figured I would do this post on one of his favorite suppers. Catfish. We usually have broiled blackened catfish, but this time I wanted to do something different, so I pan seared it in a cast iron skillet, and we really loved how it turned out!

Tilapia in Parchment Paper
Hello, everyone!! Happy Tuesday! As you're reading this, I'm on a little bit of a vacation, just for a few days, but I thought I would leave you with one of my favorite fish recipes. It looks pretty impressive, and it really couldn't be much easier.
I put the entire thing together while my husband was putting our daughter to bed the other night. It took about 15 minutes to assemble, and another 20 or so to cook!

Smoked scallop macaroni and cheese
Hello, everyone!! I'm so excited about doing this post today! As excited as I am, I have been kind of putting it off, because it's going to make me want to make this again. Like, right now, get up and get into the kitchen and make this again.
This has: scallops, mushrooms, spinach, pasta, and lots, and lots of cheese. Ooohhhh yeah. I'm going to make this again very, very soon.

Fish 'n Chips
Hello, everyone! It's Thursday again, and I hope yours is treating you well! Today we're covering another fish favorite in this house. Fish 'n chips. So easy to make, so easy to mess up. Although, even the worst batch of fish 'n chips can be saved, for me, by malt vinegar.
As a matter of fact, during our vacation to Alaska, we had fish 'n chips a few times, on varying scales of "goodness". The ones that ranked lower for me, I bathed in malt vinegar, and went on my happy way.
My husband isn't sure how I can eat fish 'n chips swimming in malt vinegar, but I adore that stuff.

Honey Lime Tilapia
Good morning, everyone! Happy Tuesday! We probably don't eat fish as often as we should, but this is one of my favorite ways to prepare tilapia. There aren't many ingredients, so these flavors really shine individually!
As much as I love lemon flavor, I feel that lime is a very under used citrus (in my kitchen, anyway), and I'm not even sure why. It works so beautifully with either sweet or savory dishes.

Shrimp and Corn Chowder
Hello, everyone! Happy Thursday! I don't know about where you are, but it is snowing here, and the whole state has lost their minds! I'm in the South, so we get one, mayyybbbeee two snow days per year, and when we do get snow, everyone panics and buys up all of the milk and bread in the grocery store.
This always baffles me. Between tonight and tomorrow morning, we're supposed to get between 6-8 inches, and while that is a lot (for us, anyway), it will all be gone in a day or so. It's not like we're going to be snowed in for days and days.
There have been a couple of times where I've gone to the store, in actual need of milk - I have a kid, we go through a lot of milk, only to either go to multiple store, or debate between getting her buttermilk or a bunch of the single serving containers to hold her over.
Not to mention that I love milk, too, but these are some desperate times!

Broiled blackened catfish
Hi everyone! If you ask my husband what his favorite fish is, he'll say, hands down, catfish. Followed, probably, by salmon. But yeah, he loves catfish. For years, I would fry it, but I'm not a huge fan of fried catfish; it usually turns out kind of greasy, in my opinion. So it wasn't something I would make very often. However, one day, I just decided to pop it under the broiler, and we haven't looked back!
Putting the catfish under the broiler gives it the same effect as frying it, without all of the greasiness that frying gives. Since I tried this, we've been eating catfish way more often! I like mine with a squeeze of lemon juice, but my husband just eats his straight up, as is.Thursday, September 18, 2014
Lime garlic shrimp
I love shrimp, but beyond scampi and frying it, I'm usually at a bit of a loss as to ways of cooking it. I love garlic with shrimp, so when I was thinking of this meal, there was no doubt that garlic was going to be involved! I was rummaging through the fridge, and stumbled across some limes that I honestly had forgotten about! Oops! So, yes, I had limes and a lot of garlic...sounds good to me!
